Growing:

Plant a few weeks before the last frost date through mid June. Successive plantings will extend the harvest period. Plant seeds ¼ inch deep in rows 8 inches apart, or scatter seeds; thin to 8 inches. Harvest by cutting greens, you may take them when small and young or wait for them to mature to full size.

Selecting & Storing:

Leaves should be green and not wilted. Clean the greens before storing by rinsing in cold water, pat them dry and wrap in a dry paper towel. They should store in your refrigerator this way for up to a week.

Basic Preparation:

Arugula, also known as "Rocket" is a very zesty, peppery-tasting green. Clean, as described above and tear or use whole in salads or on sandwiches for a flavorful accent.
